Meet Grammie
Grammie is the youngest sixty-something year old that you will ever meet (I was forbidden from putting her actual age here). She doesn’t want to age gracefully, she just refuses to age at all. If you would like to spend time with her, you’d better book your time well in advance (Okay, that’s an exaggeration, she has often cancelled plans to spend time with us, and brings chocolate chip cookies too!) because she is out almost every night country line dancing, on warmer days she is out on her wave runner, kayaking or out on a road trip with one of her crazy, wonderful friends. She is sometimes hesitant to commit to plans for fear that something more exciting might come up, but hey, I would be the same way if I was her.
My mom has always had vegetables filling most of her plate. When we transitioned to this way of eating she was pretty much on board right away, with the exception of shrimp. Oh no, can’t take away her shrimp! She didn’t care much about the science or supporting evidence (again, no time to bother with that). She trusts me to just tell her what she should eat and she will. She is a great cook and loves trying out new recipes, but what impresses me most is how she can just throw something together.
The other night while I was visiting, she decided to make potato soup. About 20 minutes later it was sitting in a bowl in front of me and it was delicious. These recipes will not be exact measurements because like I said, she just throws them together and uses ingredients that are on hand. Try some of them out, and then get out of the house and get moving!
